Garlicky Cherry Tomato Vinaigrette

Ingredients
  • 1pint cherry tomatoes
  • 2 green onionschopped
  • 1-2cloves garlicminced
  • 3tablespoons olive oildivided
  • 1tablespoon red wine vinegar
  • salt
  • pepper
Instructions
  1. Heat 1 tablespoon olive oil in a saucepan over medium heat. Add the onion and garlic and saute, stirring often, until softened, about 4 minutes.
  2. While the onion and garlic are sauteing, cut half of the cherry tomatoes in half. Add cut and whole tomatoes to the softened onion and garlic. Cook, stirring occasionally until the tomatoes begin to release their juices, about 5 minutes. Mash the cut tomatoes with a spoon.
  3. Add 1 tablespoon red wine vinegar and the remaining 2 tablespoons olive oil. Season with salt and pepper.
  4. Serve warm or room temperature.
Recipe Notes

When scapes are in season use a couple of those cute curly-stems instead of garlic.
