I went deep diving into my recipe book and found my moms recipe for Rhubarb Cake. Oh My! I forgot how delicious it is. Serve with homemade whipped cream.

Moms Rhubarb Cake

Moist, easy to make buttermilk cake with rhubarb. Top with whipping cream.
Ingredients
- 1 1/2 cup sugar
- 1/2 cup shortening
- 1 egg, beaten
- 1 t soda
- 1 cup buttermilk
- 2 cup flour
- 1/2 t salt
- 1 t vanilla
- 2 cups chopped rhubarb
- 1/2 cup sugar
- 1 T cinnamon
Instructions
- Cream together sugar and shortening.
- Add the egg and mix well.
- Combine soda and buttermilk. (It will rise so use a large container)
- Combine flour and salt.
- Add the buttermilk/soda mixture alternately with the flour/salt mixture till all is added and mixed well.
- Add the vanilla and rhubarb.
- Mix well.
- Combine the sugar and cinnamon.
- Sprinkle over the cake.
- Bake at 400 degrees for 15 minutes.
- Lower temperature in over to 350 degrees and continue baking for 20 minutes.
